Open Farm Community goes Kampong French!

When I think Open Farm Community, I think urban farming and local. Just walking into the verdant premises inspires one to go all green thumbed – almost all. I have no interest in growing my own greens, but am more than happy to support the movement by eating what’s grown locally. We all do our part. 😊

Dropping in to Open Farm Community, from now till 3 Dec, is the Paris Popup, an award-winning nomadic collective who travel the world, espousing the concept of sustainable and local, working with like-minded kitchens to share their French-inspired and local creations.

Open Farm Community Kampong French Herbs

Thursday was spent indulging in a smorgasbord of delights, around 80% of which were made from ingredients sourced from, in and around Singapore. From a heady prawn chawanmushi to a fermented black bean tapenade-dressed pearl grouper to a strangely satisfying sweet potato and gula melaka tart, I ravished them all.

Accompanied by lashings of natural wines, it’s a wonder I made it back to work – but hey, I am nothing if not the picture of restraint. 😊

Here’s a snapshot of what you can expect at this takeover of Open Farm Community. They are sharing plates designed by chef Harry Cummins (who has trained at twice-ranked World’s Best Restaurant El Cellar de Can Roca in Girona) but you could always choose to be selfish, of course.

And there is an omakase option of an 8-course for $65 per person, with a $50 top-up for pairing of wines, curated by sommelier Laura Vidal featuring an eclectic selection of natural wines. This, I heard, is forming the framework for Open Farm Community’s desire to move to a 100% natural wines presentation in the future.

Open Farm Community Kampong French Chawanmushi
Started off the meal with a hit! The normally-light chawanmushi had massive flavour injected into it, thanks to the shrimp broth. Paired with strips of young coconut for crunch and generous servings of sweet shrimp. ($16)

Shards of mint, shallots and tempeh livened up this crunchy medley of vegetables, comprising wing beans and long beans. ($14)

Flatbread stuffed with spiced potatoes and what I liked most in the dish – preserved radish, more commonly known as, chai poh. ($14)

Chilli oil, chives and nuoc cham (a Vietnamese dipping sauce of lime juice, sugar, fish sauce and water) gave bursts of flavour to the aubergine. ($17)
Open Farm Community Kampong French mussels
Reminded me of a green curry, these mussels were soft and juicy, just how fresh and well-prepped mussels should be. ($16)

The mud crab taglioni was tasty for sure, but still cannot beat my favourite crab pasta at La Cantina. ($25)

Peek-a-boo lala clams and a fermented black tapenade added excitement to the pearl grouper. And apparently, chef Joan Roca of above-mentioned El Cellar de Can Roca was impressed by this local fish, which he had never heard of before. Nice! ($29)

BBQ Spring Chicken from the kampong, and a mish-mash of dressings thanks to the herby salsa verde and sour tamarind chilli paste. ($25)

Moist pork echine, grilled and served with lightly pickled mushrooms and okinawa spinach. ($28)

Dessert! By the time these arrived, we were too full. But still appreciative of the refreshing calamansi, coconut and goat’s yoghurt and the heavier sweet potato and gula melaka tart, featuring a tamarind sorbet. ($12, $11 respectively)
